LONG LIFE OIL, i.e. the development of innovative technoLOgies to proloNG the shelf LIFE and maintain the high nutritional and sensOry quality of Olive Oils.

The project consists of research into innovative technologies for preserving the analytical and organoleptic characteristics of Olive Oil over time, with the aim of optimising the shelf-life of the finished product and stabilising its properties.
